Peter Jensen, LAU Executive Director
I grew up in rural farm country in Riverside Utah. I come from a family of nine brothers and one sister. After school, I spent two years in London, England. I then attended Utah State University, ultimately receiving my degree in Political Science. While at school I met and married my wife Tammy. After graduation, I received my commission as a 2nd Lieutenant in the United States Air Force and proceeded to spend six years on active duty. While serving I have had the opportunity to deploy three times, twice to Iraq and once to the former Yugoslavia. After leaving active duty, I ran a private school in Northern Utah for two years. I currently live in Fielding Utah and have three girls aged fifteen, twelve and ten. I still do reserve work for the military, spend lots of time reading and studying, but mostly love being with my family.
Suzanne Jensen, LAU Executive Assistant
I am so happy to be working with you at LAU! I was born and raised in Utah and have lived here most of my life. I am a mother of 5 amazing sons and a new daughter-in-law, and I live in Farmington, Utah. I attended Utah State University in beautiful Cache Valley where I earned my degree in Family and Human Development. Recently I finished a Medical Coding program and earned a certification with a Hospice credential. I have been a homeschooling mom for the past 14 years. I loved the many opportunities to teach and be involved in community home school settings. I love to cook and eat, be outside, take road trips, teach and learn, craft and decorate. Someday I hope to take a Humanitarian trip with my children, master muffin making, and teach preschool.
Cindy Taylor, Office Manager & Curriculum Director
I was born and raised in Salt Lake County, the youngest of four children. In time, I married the “Barstow Bear”, more commonly known as Big Dave, and we lived in the Salt Lake area, then Tremonton, and now reside in Lyman, Wyoming. We have one daughter, three sons, two dogs, two cats, and two adorable grandsons. We have also fostered over 30 children through the years, but are currently “empty nesters.” I received my bachelor’s degree at Utah State University in Elementary Education and have taught in public, private, and homeschool settings. I co-founded a small private school in northern Utah. I love children and I love teaching them. I love being a wife and mother, and I also have a deep love of God. I enjoy gardening and singing, although I am not good at either. My husband and I run a Dutch-oven catering business, sometimes serving up to 800 people… which is humorous because I don’t like to cook!
Cyndi Hampton, LAU Enrollment Specialist
Cyndi Hampton graduated from the University of Utah with a B.S. in Mathematics and English Literature. At the time she had no idea how this would prepare her for her future life. After briefly teaching in the public schools in Salt Lake City, she realized that there had to be a better way to educate our young people, and she embarked on a journey that has not only affected herself but her family, friends, and community. She has been involved in the homeschool community for over 25 years as she homeschooled her seven children using a variety of methods including Charlotte Mason, TJEd, LEMI classes, and Williamsburg. She helped found a Commonwealth School, Polar Star, in 2002 where she has mentored Shakespeare and Leadership classes for the past 15 years. She loves learning about anything and everything, hiking, paddle boarding, playing new board games, reading, and playing with her grandchildren. She also loves helping other homeschoolers find the best fit for their family’s educational choices.
Kate Chaney, LAU Academic & Guidance Counselor
Hello! My name is Kate Chaney and I am your school counselor here at LAU. A little about me—I’m originally from southern New Jersey and moved to Utah 7 years ago with my husband Craig. We have a one-year-old son named Connor and two little dogs. I love living in St. George and am hoping to convince my family to move out west and join me! We try to take advantage of the pleasant weather and wonderful landscape as often as possible!
Melanie Capener, LAU IT Administrator
I was born and raised on the Wasatch Front and learned to quilt in my mother’s fabric store, “Ye Olde Curiosity Shoppe.” Needless to say, I was raised with a needle in hand and the love of good books. My husband Ralph and I have four fabulous children and a new granddaughter. Our home is in Tremonton, Utah. I ran my own pre-school when my children were little, and I have been an active participant in homeschool, public, and private education. I have worked in several college libraries and began setting up the first school computer labs in the 1990’s. I love to help people and am excited to be part the LAU team. I know each of us has individual gifts that can lead to greatness. I believe anything is possible!
